Gastrology recently attended the launch of Table for 12 where Head Chef Amit Laud and the team carefully prepared each of the dishes for a uniquely Australian menu which utilises locally sourced produce.
Milk braised cauliflower, truffle, nutmeg
Paired with: T’Gallant Cape Schanck Pinot Grigio
The broth was thick, cloudy and creamy. Filled with decadently rich, unadulterated cauliflower, truffle, nutmeg the unctuous broth was very indulgent. It was the perfect start to our meal.
Squid ink, risotto, calamari, lime zephyr
Paired with: Leo Buring Eden Valley Riesling
Our favourite dish of the evening, the Squid ink risotto was outstanding. The rice in the risotto was puffy and al-dente and, coupled with generous amounts of tender squid pieces and a jet black squid ink broth, was rich and headily flavoured.
Duck breast, maple scented pumpkin, pomegranates and coffee
Paired with: Squealing Pig Pinot Noir
The slices of duck breast were beautifully cooked, allowing the rich flavour of the duck to shine through. The maple scented pumpkin, pomegranates and coffee provided the crowning element to this dish.
Chocolate; marquis, soil with hints of mints and Shiraz
Paired with: Seppelt Original Sparkling Shiraz
Beautifully rich, the chocolate marquis was a decadent end to our evening.
Suffice to say, under Head Chef Amit Laud Table for 12 is capable of leaving a breathtaking dining experience.
